A Week of School Lunches

Monster Munchies

I pack our lunches in Easy Lunchboxes. I wholeheartedly recommend them!

Lunches
Reuben-esque sandwiches (I used plain roast beef lunchmeat slices instead of corned beef and skipped the sauerkraut.)
Baked potato bits (I based them on this recipe, but added more random herbs and spices.)
Mandarin oranges

Lunches
We went to the park with some friends immediately after school on Tuesday. It was so convenient to just stick our five lunches in two cooler bags and go. Instant picnic!
English Muffin Pizzas (English muffins with some homemade pizza sauce – just tomato sauce and some Italian herbs – and grated mozzarella and pepperoni, baked in the oven at 350* for about 8 minutes)
Edamame
Peanut Butter No Bake Cookies

Lunches
I wasn’t feeling well and so did not make these lunches. My husband did them on the condition that when I blogged about them I let everyone know he made them (well, mostly… Cameron made the brownies). Thanks, Jamie (and Cameron)!
Tomato and Bacon Grilled Cheese sandwiches
Peaches
Brownies

Lunches
Macaroni and Cheese (tri-color pasta with grated mozzarella and cheddar)
Lemon Cupcakes with Lemon frosting
Caramel rice cakes

Lunches
Baked ham and cheese quesadillas (based on this recipe; didn’t use the tomatoes or green onions) with salsa verde in the dip containers
Goldfish
Chewy Peanut Butter Cookies (Cameron made these and did a great job)

    Grilled sandwiches: my daughter loves them at home but I haven’t tried at lunch because I think they might be soggy (she’s very particular!). Thoughts? Thanks!

      We haven’t had a problem with them being soggy at all. I make our lunches the afternoon/evening before so they sit in the lunchboxes in the refrigerator overnight and then I put them in cooler bags in the morning along with the kids’ snacks for the day. I let the sandwiches cool completely before putting them in the boxes and they stay quite nice and crunchy and not soggy at all :)

    Oh fun! I make and blog the kids lunches too but my girls like their lunches and snacks split up into two different trays. Just one more reason to like the big lunch bag that the ELB uses!
