Even More School Lunches

This week’s lunches included one requested by the kids (breakfast for lunch) and one that Ani did not enjoy (note what I said last week about her opinions on what makes a lunch “real” and you’ll be able to guess which one that was). The containers we use are Easy Lunchboxes.

Bow-tie and Seashell pasta with cheese and steamed broccoli (I took the grapes out and heated them in the microwave for a minute before serving to get the cheese to melt)
Grapes
Brownie

Blueberry waffles (I used the pancake mix from Costco and added blueberries), turkey bacon (I cooked the strips for 2 minutes in the microwave before twirling them and putting them together with toothpicks)
Hash browns
Syrup
Everything got heated in the microwave for 30 seconds before serving.

Salad (romaine lettuce, cucumber, red pepper stripes, grape tomatoes, avocado) with dressing (oil, vinegar, salt, pepper, garlic powder, a little sugar) and tortilla strips to be added at lunchtime (I put those in plastic baggies and folded them up and put them right on top of the salads in the containers)
Yellow cupcakes with chocolate icing and sprinkles
Mandarin oranges

Hot ham and cheese sandwiches (deli ham slices and American cheese on potato rolls; I wrapped them in foil and stuck them in the oven at 350* for 30 minutes, unwrapped them, and let them cool before putting them in the containers; I heated them for a minute in the microwave before serving)
Cucumber slices
Blue cheese dressing for dipping the cucumbers

Bean and cheese burritos (I spread a couple spoonfuls of refried beans on small tortillas, added cheese, and wrapped them up; I heated them for about 30 seconds before serving to melt the cheese)

Salsa for dipping the burritos
I really can’t even begin to say how wonderful it has been to have lunch prepared these last three weeks. I don’t have to worry about what’s for lunch and my kids aren’t fending for themselves. That makes everyone a lot happier. Plus, it’s fun to be creative and the three different size spaces in the Easy Lunchboxes makes it fun to plan our lunches. I don’t have to stop school before lunchtime to take the time to make lunch. Instead, we can do school right up until it’s time to eat.
This week we had one of Ani’s friends staying with us for two days while her parents were out of town. I just made an extra lunch those days and lunch for me and 5 kids was super easy. No scrounging at the last minute for lunch ideas. It was already in the refrigerator. A few months ago I would have laughed at the thought of a homeschool mom getting lunchboxes and making “school” lunches for her kids, but now I am totally sold on it.

I’m thinking of taking up this practice because I love the idea of lunch already being made.

Great little school lunches. I have thought about it and I am going to try this out when our new school year begins. I love the idea of not having to stop to fix lunch and having it all at my fingertips.
